You've probably experienced some big changes in your food budget during this stay-at-home time. Whether you're cooking more at home or buying a lot more take-out, chances are your spending has increased.
Food costs are part of the Big 3 of household costs (along with housing and transportation costs). According to the USDA, a family of four spends about this much per week on groceries:
Our June 11 program featured Jaimie Roberts-Duarte, who owns Beautiful Florals & Decor in EGV. He is also a great cook who plans and preps meals to make them as cost- and time-efficient as possible. He shared a few tips and tricks with us for meal-planning, including this low-cost, healthy recipe: Tomato, Basil & Feta Breakfast Egg Muffins Time: 20 min. Serves: 2 Ingredients: ½ (4 oz.) pkg. crumbled feta cheese 5 eggs ½ small pkg. fresh basil ½ pint grape tomatoes black pepper butter, unsalted Preheat oven to 400 degrees (rack near bottom). Grease 6 muffin cups with butter. Wash and dry the fresh produce. Quarter the grape tomatoes and add to the muffin tins. Pick basil leaves off the stems, roll up crosswise, and thinly slice into ribbons. Crack eggs into a medium bowl and season with salt and pepper; whisk together and pour on top of the tomatoes and basil. Top eggs with feta. Bake for 12-15 minutes, until eggs are set in the center.
